  • 1 pound shrimp, peeled and deveined
  • 2 cups mixed greens
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup Kalamata olives, pitted and sliced
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine mixed greens, cherry tomatoes, cucumber, red onion, feta cheese, and olives.
  2. In a skillet, heat olive oil over medium heat and sauté shrimp until pink and cooked through, about 2-3 minutes per side.
  3. In a small bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper.
  4. Add the cooked shrimp to the salad and drizzle with the dressing. Toss to combine.
  5. Serve immediately or chill for 30 minutes before serving for added flavor.
