  • 12 Oreo cookies
  • 1/2 cup unsalted butter, melted
  • 16 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 8 additional Oreo cookies, crushed

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, mix crushed Oreos with melted butter.
  3. Press the mixture into the bottom of mini cupcake liners in a cupcake pan.
  4. In another bowl, beat cream cheese until smooth, add powdered sugar and vanilla, and mix well.
  5. Pour the cream cheese mixture over the crust in each liner.
  6. Bake for 15 minutes, then let cool to room temperature.
  7. Whip the heavy cream until stiff peaks form and fold in crushed Oreos.
  8. Top the cooled cheesecakes with the whipped cream mixture.
  9. Chill in the refrigerator for at least 2 hours before serving.

Notes

  • For a different flavor, try adding mint extract to the filling.
  • Top with additional crushed Oreos for decoration.
