  • 2 cups diced red potatoes
  • 1 pound boneless chicken breasts
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup carrots, sliced
  • 1 cup celery, chopped
  • 1 teaspoon dried thyme
  • 1 teaspoon black pepper
  • 1 tablespoon olive oil
  • Salt to taste

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add onions and garlic, sauté until onions are translucent.
  3. Add chicken breasts and cook until lightly browned.
  4. Pour in chicken broth and bring to a boil.
  5. Add potatoes, carrots, celery, thyme, and pepper. Reduce heat and simmer for 20-25 minutes.
  6. Once the chicken is cooked, shred it and return it to the pot. Stir well.
  7. Season with salt to taste.
