  • 8 ounces turkey bacon
  • 1 pound chicken ham
  • 2 cups bell peppers, chopped
  • 1 cup onions, chopped
  • 3 cloves garlic, minced
  • 1 can diced tomatoes with green chilies
  • 2 cups chicken broth
  • 2 cups long-grain rice
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon thyme
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 2 cups cooked shrimp (optional)

Instructions

  1. In a slow cooker, combine the turkey bacon, chicken ham, bell peppers, onions, garlic, diced tomatoes, chicken broth, rice, Cajun seasoning, thyme, black pepper, and salt.
  2. Stir everything together until well combined.
  3. Cover and cook on low for 6-8 hours or high for 3-4 hours, until the rice is cooked.
  4. If using shrimp, add it in the last 30 minutes of cooking.
  5. Once done, fluff the jambalaya with a fork and serve hot.
