A warm and filling soup that brings the flavors of stuffed peppers into a comforting bowl.

Ingredients

  • 2 green bell peppers
  • 1 onion
  • 2 cloves garlic
  • 1 pound ground beef
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups beef broth
  • 1 cup rice
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Chop the bell peppers, onion, and garlic.
  2. In a large pot, brown the ground beef over medium heat.
  3. Add the chopped vegetables and garlic to the pot and sauté until softened.
  4. Stir in the diced tomatoes, beef broth, rice, and Italian seasoning.
  5. Bring to a boil, then reduce heat and simmer for 20 minutes.
  6. Season with salt and pepper to taste.
