Ingredients

  • 2 salmon fillets
  • 1 cup jasmine rice
  • 2 cups water
  • 1 tablespoon soy sauce
  • 1 tablespoon honey
  • 1 teaspoon sriracha
  • 1 teaspoon sesame oil
  • 1 avocado, sliced
  • 1 cucumber, sliced
  • 2 green onions, chopped
  • 1 tablespoon sesame seeds

Instructions

  1. Cook the jasmine rice in water according to package instructions.
  2. In a bowl, mix soy sauce, honey, sriracha, and sesame oil.
  3. Marinate the salmon fillets in the sauce for 15 minutes.
  4. While the salmon is marinating, prepare the avocado and cucumber.
  5. Cook the salmon in a skillet over medium heat for 4-5 minutes on each side, or until cooked through.
  6. To serve, place rice in bowls, top with salmon, avocado, cucumber, and garnish with green onions and sesame seeds.
