  • 2 cups cooked quinoa
  • 1 pound chicken breast, diced
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • ½ cup red onion, finely chopped
  • ½ cup feta cheese, crumbled
  • ¼ cup kalamata olives, pitted and sliced
  • ¼ cup fresh parsley, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • Salt to taste

Instructions

  1. In a large bowl, combine cooked quinoa, diced chicken, cherry tomatoes, cucumber, red onion, feta cheese, olives, and parsley.
  2. In a separate bowl, whisk together olive oil, lemon juice, oregano, and salt.
  3. Pour the dressing over the chicken mixture and toss everything together until well combined.
  4. Serve immediately or let it chill in the fridge for 30 minutes to allow the flavors to meld.

Notes

  • Great served on a bed of greens.
  • Add grilled vegetables for extra flavor.
