- 1 pound chicken breast, cooked and shredded
- 4 slices turkey bacon, cooked and crumbled
- 1 can (15 oz) white beans, drained and rinsed
- 1 can (4 oz) green chilies
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 4 cups chicken broth
- 1 cup corn, frozen or canned
- 1 cup sour cream
- 1 tablespoon olive oil
- In a large pot, heat olive oil over medium heat. Add onions and garlic, sauté until translucent.
- Add crumbled turkey bacon and mix well.
- Stir in shredded chicken, white beans, green chilies, cumin, chili powder, and corn.
- Pour in chicken broth and bring to a boil.
- Reduce heat and simmer for 20 minutes, stirring occasionally.
- Reduce heat to low, and stir in sour cream until fully combined.
