A delicious take on traditional chili using white chicken and turkey bacon for a healthier meal.

Ingredients

  • 1 lb chicken breast
  • 4 slices turkey bacon
  • 1 can white beans
  • 1 cup chicken broth
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 cup corn
  • 1 onion
  • 2 garlic cloves
  • 1 green bell pepper

Instructions

  1. Cook turkey bacon in a pot until crispy, then remove and chop.
  2. In the same pot, add diced onion, bell pepper, and garlic; sauté until soft.
  3. Add cubed chicken breast and cook until no longer pink.
  4. Stir in beans, corn, broth, and spices.
  5. Simmer for 20 minutes, then stir in turkey bacon.
  6. Serve hot, garnished with cilantro if desired.
